8 slices Black Forest or Virginia ham
¾ cup whipped cream cheese
4 large eggs
1/3 cup milk
¼ tsp salt
1 TBSP chopped green onions
½ cup chopped tomatoes
½ cup shredded white cheese
¼ cup shredded Parmesan cheese
Preheat oven to 400 degrees. Grease 4 cups of an oversized (6-muffin) muffin pan.
Place two ham slices inside of each of the four muffin cups. The ham will drape over the edges a bit. Spoon 1 TBSP cream cheese into the bottom of each cup.
Whisk together the eggs, milk and salt. Spoon mixture equally into the cups. Top with tomatoes, then green onions, then the two cheeses.
Bake for 14-16 minutes, or until a toothpick inserted in the center comes out clean. Let stand for 5 minutes before removing from pan. Serve immediately.
They were absolutely delicious! Two of these for one person was a big meal. I was surprised how well they held their muffin shapes – I expected them to kind of droop on the plate, but they didn’t at all.

My hubby was still talking about them the next day! I have more time on my hands for a couple months, while I’m laid off my seasonal ranger job for the winter. Hubby’s happy — he gets more home-cooking, a cleaner house, and a more relaxed wife!

Oooohhhh! I like this recipe. I love quiche or anything with eggs and stuff like that. I love that it is made into muffins. Yummy!
When I was younger and cooked all the time, I loved making scalloped potatoes. At Christmas I always made some special ones with honey baked ham in them. Instead of using regular milk alone, I would add some sweetened condensed milk and between that and the honey baked ham in them they had a nice sweet flavor. The kids loved them. I can’t tell you the recipe exactly because I never cooked from recipes. I was a bit of this and a dab of that kind of cook. lol

OMGoodness, that sounds really good. I like to keep boxed scalloped potatoes on hand, maybe I could try adapting one like that. I’ll let you know if I try it!
