I heard about this great idea for using up Thanksgiving leftovers from Sam the Cooking Guy. Would be perfect for the morning after, in fact.

Ingredients:

  • Stuffing (instead of the traditional English muffin)
  • Turkey (instead of traditional ham)
  • 2 Eggs
  • Gravy (instead of traditional Hollandaise sauce)

Add a bit of water to the stuffing and form two patties. Heat in the oven with two pieces of turkey until crispy and warmed through.

Poach the eggs and heat the gravy. Assemble the Benedict thusly: Stuffing on the bottom, then a slice of turkey, then a poached egg, then a generous drizzle of gravy. I added some crushed oregano as a garnish. DELISH!
