My last entry for this month’s Bake Quest:

Tortellini with Bacon, Greens, and Brown Butter


13 oz. frozen cheese tortellini

1/3 cup crumbled cooked bacon

6 TBS unsalted butter

2 cups cilantro, chopped

1 large tomato, chopped

Cook the tortellini according to package directions. Melt butter in a skillet over medium heat. Stir frequently for about 4-5 minutes, until the milk solids on the bottom start to turn brown. (Here are more detailed instructions on browning butter.)

Remove from heat. Add all the ingredients and toss well to coat. Return to heat until everything is hot. Serve immediately.
