Crab cakes without the fuss. Got this recipe from Real Simple magazine, from their now-defunct “Fake It, Don’t Make It” column. I stopped subscribing just because they dropped this one feature.
Easy Crab Cakes
(Makes 4 to 6)
Ingredients:
2.5 cups potato chips
2 cans lump crabmeat
1/3 cup tartar sauce (mayonnaise works fine, too)
1.5 TBS mustard
1/4 tsp black pepper
2 TBS butter, cut into thin slices or small chunks
In a mixing bowl, crush the potato chips with the bottom of a measuring cup.
Add the crabmeat, tartar sauce, mustard, and pepper.
Stir to combine well.
Wash your hands. Form into 4 to 6 patties and arrange on a parchment-lined baking sheet. Top with pats of butter.
Place under broiler for 1-3 minutes, until browned. Serve with lemon wedges and salad. Or, lacking that, sour cream.

I’m not a fan of crab, but I’d try these – they sound pretty good.
They are delicious. And crab cakes aren’t like eating crab legs.
Oh, YUM! Thanks Kimmers, I would probably substitute salmon for crab but I love this.
I bet that would work well. Just make sure it’s well-drained.
I’m marking this as a “Like” to make sure I’ll be able to find it again. We have all of the ingredients for the crabcakes right now. The only thing we don’t have is a working broiler. I wonder if frying them will work as well?
I bet that would work fine. I’d leave out the butter then, because you’ll have a little oil in the pan. Let me know how it goes!
I am SO going to try these! They sound awesome!
There’s no excuse not to, they’re so easy.
Yum, yum, yum! I am making these crab cakes for sure this weekend. I am sure I will love these!
Haha! I’m sure you will, too.
Oh Kim, those look incredible! And so easy, too.
They are so filling, too. Now that you’re working out, you can afford it!
